This Barista matcha originates from Japan (Yabukita Cultivar) & Saemidori) and of superior quality is specially selected for the preparation of lattes and pastries.

Its emulsion is a vibrant green, a color sought after by matcha enthusiasts. The tea has a lovely roundness and delicate notes of spring flowers, accompanied by traditional fresh and slightly sweet vegetal aromas (tall herbs).

Preparation of Matcha latte

HOT (for 350 ml)

• Whisk 2 g (approximately 1 c. has tea) of matcha in 50 ml hot water (approximately 90°C).
• Create a lather and add 200 ml warm milk (plant or animal).
• Sweeten to taste.

ICE (for 350 ml)

• Pour ¾ of cup milk of your choice (approximately 180 g) in a glass filled with ice.
• In a bowl, whisk 2 c. has tea (4 g) of matcha and 1 to 2 c. has tea of sugar in approximately 50 ml hot water (75 to 95°C), until a homogeneous and slightly foamy mixture is obtained.

Gently pour the matcha over the milk, mix if desired, and enjoy.

Traditional Matcha Preparation

• Sift the desired amount of matcha through a fine sieve.*
• Warm the chawan (bowl) with hot water.
• Empty the water and then wipe the bowl with a clean cloth.
• Depending on the desired intensity, put between 1 and 2 g (1/2 to 1 tsp) of matcha in the center of the bowl.
• Gently pour 65 to 100 ml of water at 75°C over the tea.
• Whisk vigorously with a chasen (matcha whisk) for about 30 seconds until a homogeneous foam forms.
• Enjoy.

^*Optional. Matcha powder keeps best in the refrigerator, and sifting it will make the foam
