Café Pista | Genji Challa, Ethiopia - 300gr

For the third consecutive year, Genji Challa returns to the Pista menu. This exceptional coffee comes from the Telila washing station, located in Kecho Anderacha, in the Jimma region of Ethiopia.

A slightly acidic coffee that can be enjoyed as an espresso or filtered coffee. It offers a delicate profile as an espresso, while as a filtered coffee, it reveals remarkable complexity.

💁🏻‍♀️ASSEMBLY INFORMATION

Telila stands out for its priorities: quality control and innovation. One of its unique features is that it separates batches upon arrival based on the Kebele (district of origin). This guarantees remarkable traceability of the cherries, a rare process in Ethiopia where producers typically bring their cherries to a station for sorting based solely on processing methods. In this case, the batches are simply identified by the station's name. This collaboration with Telila is made possible thanks to our import partner, Osito Coffee.

Mike and his team receive coffee cherries from three Kebele : Genji Challa, Gera and Kolla. Grown at around 2000 meters above sea level, this coffee belongs to the variety 74112 (Serto), selected in 1979 by the JARC (Jimma Agricultural Research Center) for its resistance to diseases and its high sensory potential.

The Genji Challa processing process is particularly meticulous. The cherries, picked at peak ripeness, are first sorted by floating, then manually, to remove overripe or underripe fruit. They are then partially pulped using a mechanical pulper and then fermented in water for 24 to 36 hours. After fermentation, they are washed under running water to remove any remaining mucilage, before being spread on raised beds, where they dry slowly and evenly for 10 to 14 days.
