Mastering extraction variables

To get the most out of your AeroPress, you need to understand the extraction variables. Counter Culture Coffee identifies six, which you can adjust to your preferences:

  1. Coffee to water ratio : from 1:6 (intense) to 1:16 (light, filter style).

  2. Grinding: medium-fine recommended, but you can adjust depending on the brewing time.

  3. Temperature: between 80°C and 95°C, depending on the coffee profile (hotter for body, lower for sweetness).

  4. Infusion time: from 30 seconds to 2 minutes or more.

  5. Turbulence : stir gently for clarity, or vigorously for more complete extraction.

  6. Water quality : choose filtered, low-mineralized water.

How does the AeroPress work?

The AeroPress may seem intriguing at first glance, but its operation is actually very simple and intuitive.


It works by manual pressure. The principle is simple: ground coffee is infused in hot water for a short time, then pressure is applied to extract the beverage through a filter.


Two methods dominate:

1. The classic method

  1. Place a paper filter in the cap, rinse.

  2. Screw the cap onto the cylinder.

  3. Add the coffee (14–18 g) then the hot water (200–220 ml).

  4. Stir for 10–20 sec.

  5. Gently insert the plunger and press for 30–45 sec.

2. The reverse method

  1. Place the piston at the bottom, insert the cylinder on top (inverted).

  2. Add the coffee then the hot water.

  3. Let it steep for 1–2 minutes.

  4. Screw on the cap with the rinsed filter.

  5. Turn the whole thing upside down over a cup and press.

    • Pre-infuse the coffee with a small volume of water for 30 seconds ("bloom") to release the gases.

    • If the piston resists too much: grind too fine or too tightly packed.
