COFFEE DESCRIPTION
This floral coffee develops aromas of jasmine. Sweet and subtly acidic, it tastes of green apple and apricot.
Grown at an altitude of approximately 1850 meters, this coffee is of the Bourbon Red variety. It is picked at full maturity and sorted first by flotation, then by hand, to remove overripe or underripe cherries, before being stored in plastic bags for 12 hours. It is then completely pulped by hand and rinsed under running water to remove any remaining mucilage, before being soaked in water for 8 to 12 hours. Finally, it is spread out on raised beds for 30 to 40 days for slow and even drying.
Slightly acidic, it can be enjoyed as an espresso or a filter coffee, offering a delicate espresso or a complex filter coffee.
